  • Dairy & Cheese: 100 g (3.5 oz) smoked cheese, grated (such as smoked mozzarella or cheddar), 100 g (3.5 oz) ricotta cheese, 50 g (1.75 oz) parmesan cheese, grated, 100 ml (1/3 cup + 1 tbsp) whole milk or cream
  • Herbs & Spices: 1 tsp dried basil, 1 tsp dried oregano, ½ tsp crushed red pepper flakes (optional), Salt and black pepper, to taste, Fresh basil leaves, for garnish

Instructions

Sauté vegetables:
Heat olive oil in a large pot over medium heat. Sauté onion, carrot, and celery for 5–6 minutes, until softened.
Add garlic:
Stir in the garlic and cook for 1 minute until fragrant.
Add tomatoes and seasoning:
Add tomato paste, diced tomatoes, dried basil, oregano, and red pepper flakes (if using). Cook for 2–3 minutes.
Simmer the broth:
Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
Cook pasta:
Add the broken lasagne sheets to the soup. Simmer for 10–12 minutes, stirring occasionally, until the pasta is tender.
Add dairy:
Stir in the milk or cream, ricotta, and half of the parmesan. Season with salt and pepper to taste.
Prepare for broiling:
Ladle the soup into oven-safe bowls. Sprinkle each with smoked cheese and the remaining parmesan.
Broil:
Place bowls under a preheated broiler for 2–3 minutes, or until the cheese is bubbling and golden.
Garnish and serve:
Garnish with fresh basil and serve hot.
