- Herbs & Spices: 1 tsp dried basil, 1 tsp dried oregano, ½ tsp crushed red pepper flakes (optional), Salt and black pepper, to taste, Fresh basil leaves, for garnish
Instructions
- Sauté vegetables:
- Heat olive oil in a large pot over medium heat. Sauté onion, carrot, and celery for 5–6 minutes, until softened.
- Add garlic:
- Stir in the garlic and cook for 1 minute until fragrant.
- Add tomatoes and seasoning:
- Add tomato paste, diced tomatoes, dried basil, oregano, and red pepper flakes (if using). Cook for 2–3 minutes.
- Simmer the broth:
- Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Cook pasta:
- Add the broken lasagne sheets to the soup. Simmer for 10–12 minutes, stirring occasionally, until the pasta is tender.
- Add dairy:
- Stir in the milk or cream, ricotta, and half of the parmesan. Season with salt and pepper to taste.
- Prepare for broiling:
- Ladle the soup into oven-safe bowls. Sprinkle each with smoked cheese and the remaining parmesan.
- Broil:
- Place bowls under a preheated broiler for 2–3 minutes, or until the cheese is bubbling and golden.
- Garnish and serve:
- Garnish with fresh basil and serve hot.
