Smoked Cheese Lasagne Soup Bowls (Wersja do druku)

01 - 1 medium onion, finely chopped
02 - 2 cloves garlic, minced
03 - 1 large carrot, diced
04 - 1 stalk celery, diced
05 - 14 ounces canned diced tomatoes
06 - 2 tablespoons tomato paste

07 - 4 cups vegetable broth
08 - 2 tablespoons olive oil

→ Pasta

09 - 5 ounces lasagne sheets, broken into large pieces

10 - 3.5 ounces smoked cheese, grated (such as smoked mozzarella or cheddar)
11 - 3.5 ounces ricotta cheese
12 - 1.75 ounces parmesan cheese, grated
13 - 1/3 cup plus 1 tablespoon whole milk or cream

→ Herbs & Spices

14 - 1 teaspoon dried basil
15 - 1 teaspoon dried oregano
16 - 1/2 teaspoon crushed red pepper flakes (optional)
17 - Salt and black pepper, to taste
18 - Fresh basil leaves, for garnish

# Przygotowanie:

01 - In a large pot, heat olive oil over medium heat. Sauté onion, carrot, and celery for 5 to 6 minutes, until softened.
02 - Stir in the minced garlic and cook for 1 minute, allowing it to release its aroma.
03 - Add tomato paste, diced tomatoes, dried basil, dried oregano, and red pepper flakes if using. Cook for 2 to 3 minutes to concentrate flavors.
04 - Pour in vegetable broth. Bring mixture to a boil, then reduce heat and simmer for 15 minutes.
05 - Add broken lasagne sheets to the pot. Simmer for 10 to 12 minutes, stirring occasionally, until pasta is al dente.
06 - Stir in whole milk or cream, ricotta, and half of the grated parmesan cheese. Season to taste with salt and black pepper.
07 - Ladle the soup into oven-safe bowls. Top each bowl evenly with smoked cheese and remaining parmesan cheese.
08 - Place filled bowls on a baking tray and broil under a preheated broiler for 2 to 3 minutes, or until cheese topping is bubbling and golden brown.
09 - Top soup bowls with fresh basil leaves and serve hot.
