- 12 oz (340 g) short pasta (fusilli, penne, or rotini)
- 3 cups fresh or frozen corn kernels (about 4 ears, or 500 g)
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely diced
- 1 jalapeño, seeded and finely chopped (optional)
- 1/2 cup fresh cilantro, chopped
- 1/3 cup sour cream
- 1/4 cup Greek yogurt
- 2 tbsp fresh lime juice
- 1 1/2 tsp lime zest
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/2 cup cotija cheese, crumbled (or feta as substitute)
- 1/2 tsp chili flakes (optional, for topping)
- Lime wedges, for serving
Instructions
- 1. Cook the pasta
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cool water. Set aside.
- 2. Char the corn
- Meanwhile, heat a large skillet over medium-high heat. Add the corn (no oil necessary if using nonstick) and cook for 5–7 minutes, stirring occasionally, until charred in spots. Remove from heat and let cool slightly.
- 3. Make the dressing
- In a large bowl, whisk together sour cream, Greek yogurt, lime juice, lime zest, garlic, chili powder, smoked paprika, cumin, salt, and black pepper until smooth.
- 4. Combine ingredients
- Add the cooked pasta, charred corn, cherry tomatoes, red onion, jalapeño, and cilantro to the dressing. Toss gently to coat everything evenly.
- 5. Add cheese
- Fold in most of the cotija cheese, reserving a bit for garnish.
- 6. Serve
- Transfer to a serving bowl. Sprinkle with remaining cotija cheese and chili flakes (if using). Serve with lime wedges.
Zusatztipps für die Zubereitung
Prepare all the components ahead of time and keep them chilled separately. Combine everything with the dressing just before serving to keep the fresher textures vibrant and bright. Using frozen corn is a great shortcut when fresh corn isn’t available, but charring it well is key for authentic flavor. Adjust the seasoning and spice to your taste by varying the jalapeño and chili flakes.

Varianten und Anpassungen
For a vegan version, substitute sour cream and Greek yogurt with plant-based alternatives and use a vegan cheese substitute in place of cotija. You can also swap the pasta type to suit your preference or use gluten-free pasta if needed. Adding grilled corn on the cob instead of kernels adds even more smoky depth for those with extra time.
Serviervorschläge
This pasta salad pairs beautifully with grilled meats, roasted vegetables, or as a flavorful side for picnics and barbecues. Garnish with extra fresh cilantro and lime wedges for a refreshing finish. Serve chilled or at room temperature for the best flavor experience.
