In a large bowl, mix the flour and salt. Make a well in the center, add the egg and gradually pour in the water, mixing until a dough forms. Knead for about 5 minutes until smooth.

Cover the dough with a damp cloth and let it rest for 20 minutes.

In a separate bowl, combine chopped strawberries, sugar, and vanilla extract. Let sit for 10 minutes to macerate.

Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a glass or cookie cutter.

Place a small spoonful of the strawberry filling in the center of each circle. Fold the dough over, sealing the edges by pressing firmly.

Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float to the surface, about 3-5 minutes.

Remove with a slotted spoon and let drain. Serve warm with a dollop of sour cream on top, sweetened if desired.
