In a large bowl, mix the flour and salt. Create a well in the center and add the egg. Gradually incorporate the flour into the egg while adding water until a soft dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 20 minutes.

In a skillet, heat olive oil over medium heat. Add the onion and sauté until translucent. Add the chopped spinach and cook until wilted. Remove from heat, stir in the feta cheese, and season with salt and pepper. Let cool.

Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into circles using a round cutter or glass.

Place about 1 tablespoon of the filling in the center of each circle. Fold the dough over and pinch the edges to seal.

Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes or until they float to the surface.

Remove with a slotted spoon and serve hot, optionally topped with sour cream or sautéed onions.
