Cook the chopped onion in butter over medium heat until golden. In a bowl, mix mashed potatoes, cheese, sautéed onions, salt, and pepper until well combined.

Roll out the dough on a floured surface to about 1/8 inch thick. Cut into 3-inch circles using a cookie cutter or glass.

Place a spoonful of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Bring a large pot of salted water to a boil. Cook the dumplings in batches for about 5-7 minutes, or until they float to the surface.
