Preheat the oven to 180°C (350°F). In a mixing bowl, combine flour, powdered sugar, and salt. Add softened butter, egg yolk, and vanilla extract; mix until a dough forms.

Press the dough into a 22 cm (9 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and bake for 20-25 minutes or until golden. Let cool.

In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest over medium heat. Stir constantly until the mixture thickens and coats the back of a spoon.

Remove from heat and whisk in the cubed butter until smooth. Allow the lemon curd to cool slightly.

Once the crust is cooled, spread the lemon curd evenly over the crust. Top with mixed berries and garnish with mint leaves if desired.
