Mazurek z kremem cytrynowym (Drukuj)

Tradycyjny polski deser z kruchym spodem, orzeźwiającym kremem cytrynowym i świeżymi owocami leśnymi.

# Składniki:

→ Crust

01 - 250 g all-purpose flour
02 - 125 g unsalted butter, softened
03 - 80 g powdered sugar
04 - 1 large egg yolk
05 - 1 teaspoon vanilla extract
06 - Pinch of salt

→ Lemon Curd

07 - 3 large eggs
08 - 150 g granulated sugar
09 - 100 ml fresh lemon juice
10 - Zest of 2 lemons
11 - 100 g unsalted butter, cubed

→ Topping

12 - 200 g mixed berries (strawberries, blueberries, raspberries)
13 - Fresh mint leaves for garnish (optional)

# Kroki wykonania:

01 - Preheat the oven to 180°C (350°F). In a mixing bowl, combine flour, powdered sugar, and salt. Add softened butter, egg yolk, and vanilla extract; mix until a dough forms.
02 - Press the dough into a 22 cm (9 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and bake for 20-25 minutes or until golden. Let cool.
03 - In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest over medium heat. Stir constantly until the mixture thickens and coats the back of a spoon.
04 - Remove from heat and whisk in the cubed butter until smooth. Allow the lemon curd to cool slightly.
05 - Once the crust is cooled, spread the lemon curd evenly over the crust. Top with mixed berries and garnish with mint leaves if desired.
