Zimna zupa z buraków z ogórkiem i jogurtem, świetna na gorące dni jako lekka przystawka.

# Składniki:

01 - 3 medium beets, roasted and peeled
02 - 1 cucumber, peeled and diced
03 - 1 red bell pepper, diced
04 - 1 small red onion, chopped
05 - 2 cloves garlic, minced
06 - 2 cups vegetable broth
07 - 2 tablespoons olive oil
08 - 2 tablespoons red wine vinegar
09 - Salt and pepper to taste

→ Garnish

10 - 1 cup plain yogurt
11 - Fresh herbs (e.g., dill or parsley) for garnish

# Kroki wykonania:

01 - In a blender, combine the roasted beets, cucumber, red bell pepper, red onion, garlic, vegetable broth, olive oil, and red wine vinegar. Blend until smooth.
02 - Taste and season with salt and pepper as needed. Chill in the refrigerator for at least 30 minutes before serving.
