01 - 2 tablespoons unsalted butter
02 - 1 tablespoon olive oil
03 - 1 medium yellow onion, finely chopped
04 - 2 cloves garlic, minced
05 - 2 medium carrots, diced
06 - 2 celery stalks, diced
07 - 6 cups vegetable broth
08 - 1 bay leaf
09 - 1 teaspoon dried thyme
10 - 1 teaspoon smoked paprika
11 - Salt and black pepper, to taste

12 - 2 medium Yukon Gold potatoes, peeled and diced
13 - 1 cup ricotta cheese
14 - 1 cup sharp cheddar cheese, grated
15 - 1/2 cup sour cream
16 - 1/4 cup chopped fresh dill

→ Lasagne & Pickle

17 - 6 lasagne noodles, broken into bite-sized pieces
18 - 1 cup dill pickles, diced
19 - 1/4 cup pickle juice

# Przygotowanie:

01 - In a large soup pot, melt the butter and heat the olive oil over medium flame. Add chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables are soft and aromatic.
02 - Incorporate the diced potatoes, bay leaf, thyme, smoked paprika, salt, and black pepper. Stir well to evenly coat the vegetables with seasonings.
03 - Pour in vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15 minutes, or until potatoes are tender when pierced with a fork.
04 - Add broken lasagne noodles to the pot and cook for approximately 8 minutes until al dente.
05 - Stir in diced dill pickles and pickle juice. Continue simmering for 3 minutes to infuse flavors.
06 - Remove the bay leaf. Off the heat, blend in ricotta, grated cheddar, sour cream, and fresh dill until cheeses are fully melted and the soup attains a creamy texture.
07 - Taste and refine the seasoning with extra salt, pepper, or a splash of pickle juice if desired.
08 - Ladle into bowls. Top each serving with a dollop of sour cream, additional fresh dill, cracked black pepper, and sliced pickles if preferred.
