In a large pitcher, combine the apple juice, lime juice, and honey or agave syrup (if using). Stir well to mix.

Gently crush the mint leaves to release their flavor and add them to the pitcher.

Just before serving, pour in the sparkling water and stir gently to combine.

Serve over ice and garnish with additional mint leaves if desired.
